6 Casa Mendosa® Medium White 7” Tortillas1lb ground beef and 1 lbs. ground lamb1 medium onion, chopped8oz cherry tomatoes1 green pepper, chopped1 can tomato paste (6oz)2 jalapenos, sliced and seeded¼ cup minced parsley1 tbsp. harissa chili paste1 tbsp. red wine1 tbsp. ground sumac¼ tsp. salt and pepper½ tsp. cinnamon1 medium lemon, cut in wedgesCooking spray.
INSTRUCTIONS.
Preheat your oven to 450FBring a large pan to medium heat, adding in onions, cherry tomatoes, chopped green pepper and ground beef. Stirring the mixture until the beef is cooked through.In a small bowl, add tomato paste, jalapenos, parsley, chili paste, red wine, sumac, salt, pepper and cinnamon stirring until combined. Add the sauce to you meet mixture lowering the heat and letting it simmer.While the meet is simmering brush or spray tortillas lightly with oil and place on a non-stick baking sheet. Bake in the oven at 450F for 4 minutes, or until golden brown and crispy around the edges.Add warm meat mixture evenly on top of each tortilla. Serve with lemon wedges and enjoy!
