Vegetarian Black Bean Breakfast Tacos.
INGREDIENTS.
For the Tacos4 Casa Mendosa® 7” Original Tortillas 1 tbsp. unsalted butter4 eggs1 avocado, slicedSalt and pepper to taste1 cup fresh cilantro, choppedFor the Black Beans1 tsp. olive oil1 clove garlic, minced2 cups whole black beans, drained¼ tsp. ground cumin1 tsp. lime juiceSalt and pepper to tasteOptional: Add some heat with 1 tsp. minced fresh jalapeñoFor the Lime Crema½ cup plain Greek YogurtSalt and pepper to taste.
INSTRUCTIONS.
In a small saucepan, heat 1 tsp. olive oil over medium heat.Add the minced garlic and sauté for about two minutes or until the garlic has softened.Add 2 cups of black beans, ¼ tsp. ground cumin, 1 tsp. limejuice, salt, and pepper to saucepan and stir to combine. Reduce the heat to low and cook, stirring occasionally, for 10-15 minutes while you prep the rest of the taco ingredients.
