Spicy Chorizo Sausage Enchiladas.
INGREDIENTS.
6 Original 10" Medium Tortillas2 tbsp. canola oil1lb chorizo sausage1 bell pepper chopped½ red onion, chopped½ tsp. salt½ tsp. chili powder¼ tsp. cayenne pepper¼ tsp. pepper1-2 jalepeno peppers, sliced1 shredded cheddar cheeseFor garnish: ½ cup salsa verde, ½ cup chopped tomatoes chopped tomatoes, 2 tbsp finely chooped cilantro and ¾ cup cheddar cheese.
INSTRUCTIONS.
In a large skillet, heat 2 tbsp. oil over medium heat, sauté onion and peppers until soft and set aside.In same pan, cook and crumble sausage until no longer pink roughly 5-7 minutes. Using a slotted spoon, remove cooked sausage from the pan and discard grease.Add sausage back to pan and stir in seasonings until fully coated. Add in cooked vegetables and chopped green chiles.Remove pan from heat, slowly add cheese and combine until just slightly melted.Place ½ cup of filling onto each authentic Casa Mendosa® Queso Flavoured Tortilla and roll them up! Place in a greased 13x9-in. baking dish, seam side down. Garnish the enchiladas with salsa verde and cheddar.Preheat oven to 375°F. Bake enchiladas, covered, 35-40 minutes, until slightly browned.Let rest for 2 minutes, top with fresh cilantro and chopped tomatoes. Serve and enjoy!
