Firecracker Casserole

Ingredients
- 8 Casa Mendosa® 50/50 Corn-Wheat Tortillas (broken up into 6 pieces each)
- 2 lb. of lean ground beef
- 1 cup of chopped onion
- 1 tsp. of salt
- 2 tbsp. chili powder
- 1 tsp. of cumin
- 2 tbsp. of chopped jalapeno
- 1 (14 oz.) can of ranch style beans, undrained
- 1 (14 oz.) can of diced tomatoes
- 1 (14 oz.) can of cream of mushroom soup
- 6 oz. shredded cheddar cheese
- Optional: chopped green onion

Prep Time: 30 minutes
Cook Time: 20 minutes
Total Time: 20 minutes
- Preheat your oven to 350°F
- In a medium skillet, brown the beef and drain the fat
- Add onions, salt, chili powder, cumin, and jalapeño to the beef and stir together
- Spray a 9”x13” dish
- Add meat and begin layering the dish adding ranch style beans, tomatoes, mushroom soup, tortillas and cheese
- Repeat till you have around 3 layers or until all the ingredients have been used
- Place in the oven and baked for 50 minutes. Cut and serve with some chopped green onion to add a little colour to the dish. Enjoy
