Firecracker Casserole

Ingredients

  • Casa Mendosa® 50/50 Corn-Wheat Tortillas (broken up into 6 pieces each)
  • 2 lb. of lean ground beef
  • 1 cup of chopped onion
  • 1 tsp. of salt
  • 2 tbsp. chili powder
  • 1 tsp. of cumin
  • 2 tbsp. of chopped jalapeno
  • 1 (14 oz.) can of ranch style beans, undrained
  • 1 (14 oz.) can of diced tomatoes
  • 1 (14 oz.) can of cream of mushroom soup
  • 6 oz. shredded cheddar cheese
  • Optional: chopped green onion

Directions

Prep Time: 30 minutes

Cook Time: 20 minutes

Total Time: 20 minutes

  • Preheat your oven to 350°F
  • In a medium skillet, brown the beef and drain the fat
  • Add onions, salt, chili powder, cumin, and jalapeño to the beef and stir together
  • Spray a 9”x13” dish
  • Add meat and begin layering the dish adding ranch style beans, tomatoes, mushroom soup, tortillas and cheese
  • Repeat till you have around 3 layers or until all the ingredients have been used
  • Place in the oven and baked for 50 minutes. Cut and serve with some chopped green onion to add a little colour to the dish. Enjoy
