Firecracker Casserole.
INGREDIENTS.
8 Casa Mendosa® 50/50 Corn-Wheat Tortillas (broken up into 6 pieces each)2 lb. of lean ground beef1 cup of chopped onion1 tsp. of salt2 tbsp. chili powder1 tsp. of cumin2 tbsp. of chopped jalapeno1 (14 oz.) can of ranch style beans, undrained1 (14 oz.) can of diced tomatoes1 (14 oz.) can of cream of mushroom soup6 oz. shredded cheddar cheeseOptional: chopped green onion.
INSTRUCTIONS.
Preheat your oven to 350°FIn a medium skillet, brown the beef and drain the fatAdd onions, salt, chili powder, cumin, and jalapeño to the beef and stir togetherSpray a 9”x13” dishAdd meat and begin layering the dish adding ranch style beans, tomatoes, mushroom soup, tortillas and cheeseRepeat till you have around 3 layers or until all the ingredients have been usedPlace in the oven and baked for 50 minutes. Cut and serve with some chopped green onion to add a little colour to the dish. Enjoy.
