Make –Ahead Meat Free Burritos.
INGREDIENTS.
Casa Mendosa® 10” Original Tortillas3 ½ cups of ground tofu or Impossible meat2 tbsp. of Mexican spice mix or taco seasoning2 1/3 cup of refried beans2 red bell peppers2 stalks of green onions1 ¼ cup of canned or frozen corn, drained½ cup of cilantro½ cup of sliced black olives½ of pickled Jalapeno slices.
INSTRUCTIONS.
Preheat over to 425°F.Place a frying pan on medium to high heat with a little oil. Once warm add in ground tofu or impossible meat and Mexican spice or taco seasoning. Cook until browned and remove from heatPlace a tortilla on a flat surface and begin by spreading 1/3 cup of refried beans on one side of the tortilla and ¼ cup of Mexican spiced tofu or impossible meatAdd the remaining bell pepper, green onions, corn, cilantro, olive and jalapenosFold in each side of the tortilla, then roll, starting from the closest edge, until the wrap is fully closedPlace burritos in a large casserole dish and bake in the oven for 15-20 minutes or until the wraps are lightly golden.Allow the wraps to cool to room temperature before freezing.To reheat, remove from freezer and allow the burrito to thaw. Reheat in the oven or microwave until warm.Serve with salsa, avocado or guacamole.
