Avocado Chicken Fajitas Featuring Casa Mendosa Tortillas

Avocado Chicken Fajitas

Serves 2 / 30 mins


  • 4 Casa Mendosa™ White Medium Tortillas, warmed

  • 1-½ lbs boneless skinless chicken breast, cut into thin strips

  • 2 – 3 tbsp. olive oil, or as necessary

  • 2 avocados

  • 1 lime

  • Salt and pepper

  • Cilantro

  • 2 cups diced tomatoes

  • 1 medium/large red onion, thinly sliced

  • 1 medium red bell pepper, cut into thin strips

  • 1 medium yellow bell pepper, cut into thin strips

  • ¼ cup water

Fajita Mix:

  • 1 tbsp. cornstarch

  • 2 tsp. chilli powder

  • 1 tsp. salt

  • 1 tsp. paprika

  • ½ tsp. onion powder

  • ½ tsp. garlic powder

  • ½ tsp. cumin

  • ¼ tsp. cayenne pepper


Prep Time: 10 minutes Cook Time: 20 minutes Total Time: 30 minutes

  1. Make guacamole using 2 avocados, juice of 1 lime, cilantro, salt and pepper to taste. Set aside.

  2. In a large skillet add the olive oil, and chicken strip and cook over medium-high heat for about 3 minutes or until chicken is lightly browned and cooked through; stir and flip intermittently. Remove chicken from skillet (keep the oil and cooking juices in the pan) and set aside.

  3. If necessary, add a bit more oil to the pan. Add the onions and sauté over medium heat for about 5 to 7 minutes, or until they begin to caramelize and soften; stir intermittently.

  4. Add the peppers and sauté for about 5 minutes, or until they begin to soften; stir intermittently.

  5. Mix ingredients for fajita mix and set aside.

  6. Return chicken to skillet.

  7. Add the water, fajita-seasoning mix, and cook for about 3 minutes, or until chicken is heated through; stir intermittently.

  8. Create a bed of guacamole on Casa Mendosa Tortillas. Spoon fajita mixture on top of guacamole. Top with diced tomatoes.  

  9. Serve and enjoy.
