Vegetarian Black Bean Breakfast Tacos

Ingredients
For the Tacos
- 4 Casa Mendosa® 7” Original Tortillas
- 1 tbsp. unsalted butter
- 4 eggs
- 1 avocado, sliced
- Salt and pepper to taste
- 1 cup fresh cilantro, chopped
For the Black Beans
- 1 tsp. olive oil
- 1 clove garlic, minced
- 2 cups whole black beans, drained
- ¼ tsp. ground cumin
- 1 tsp. lime juice
- Salt and pepper to taste
- Optional: Add some heat with 1 tsp. minced fresh jalapeño
For the Lime Crema
- ½ cup plain Greek Yogurt
- Salt and pepper to taste

- In a small saucepan, heat 1 tsp. olive oil over medium heat.
- Add the minced garlic and sauté for about two minutes or until the garlic has softened.
- Add 2 cups of black beans, ¼ tsp. ground cumin, 1 tsp. limejuice, salt, and pepper to saucepan and stir to combine. Reduce the heat to low and cook, stirring occasionally, for 10-15 minutes while you prep the rest of the taco ingredients.
