Vegetarian Black Bean Breakfast Tacos

Ingredients

For the Tacos

For the Black Beans

  • 1 tsp. olive oil
  • 1 clove garlic, minced
  • 2 cups whole black beans, drained
  • ¼ tsp. ground cumin
  • 1 tsp. lime juice
  • Salt and pepper to taste
  • Optional: Add some heat with 1 tsp. minced fresh jalapeño

For the Lime Crema

  • ½ cup plain Greek Yogurt
  • Salt and pepper to taste

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 15 minutes

  • In a small saucepan, heat 1 tsp. olive oil over medium heat.
  • Add the minced garlic and sauté for about two minutes or until the garlic has softened.
  • Add 2 cups of black beans, ¼ tsp. ground cumin, 1 tsp. limejuice, salt, and pepper to saucepan and stir to combine. Reduce the heat to low and cook, stirring occasionally, for 10-15 minutes while you prep the rest of the taco ingredients.
