Chickpea Za’atar Salad Tacos.
INGREDIENTS.
2 Casa Mendosa® Whole Wheat Medium 7” Tortillas2 tsp. olive oil1 can chickpeas, drained and rinsed1 tsp. cumin½ tsp. salt (for chickpeas)1 tsp. sesame seeds½ cup Baba Ghanoush or Hummus2 cups arugula1 tomato, diced1 cucumber, diced1 tbsp. olive oil1 tsp. ground coriander¼ tsp. salt (for salad mixture).
INSTRUCTIONS.
Place olive oil in a skillet over medium heat. Add chickpeas and spices stirring until warm.In a medium bowl, add arugula, cucumber tomatoes, olive oil, coriander and ¼ tsp salt and set aside.Lightly toast tortillas in non-stick pan until warm and pliable.Assemble tacos by spreading Hummus or Baba Ghanoush onto the warm tortillas, add salad and warm chickpea mixture. Serve and enjoy!
