Chickpea Za’atar Salad Tacos

Serves 2 / 20 Minutes

Ingredients

  • 2 tsp. olive oil
  • 1 can chickpeas, drained and rinsed
  • 1 tsp. cumin
  • ½ tsp. salt (for chickpeas)
  • 1 tsp. sesame seeds
  • ½ cup Baba Ghanoush or Hummus
  • 2 cups arugula
  • 1 tomato, diced
  • 1 cucumber, diced
  • 1 tbsp. olive oil
  • 1 tsp. ground coriander
  • ¼ tsp. salt (for salad mixture)

Prep Time: 15 minutes

Cook Time: 5 minutes

Total Time: 5 minutes

  • Place olive oil in a skillet over medium heat. Add chickpeas and spices stirring until warm.
  • In a medium bowl, add arugula, cucumber tomatoes, olive oil, coriander and ¼ tsp salt and set aside.
  • Lightly toast tortillas in non-stick pan until warm and pliable.
  • Assemble tacos by spreading Hummus or Baba Ghanoush onto the warm tortillas, add salad and warm chickpea mixture. Serve and enjoy!
