Chickpea Za’atar Salad Tacos
Serves 2 / 20 Minutes
Ingredients

2 tsp. olive oil
-
1 can chickpeas, drained and rinsed

1 tsp. cumin
-
½ tsp. salt (for chickpeas)

1 tsp. sesame seeds
-
½ cup Baba Ghanoush or Hummus
-
2 cups arugula
-
1 tomato, diced
-
1 cucumber, diced
-
1 tbsp. olive oil
-
1 tsp. ground coriander
-
¼ tsp. salt (for salad mixture)

Total Time: 5 minutes
- Place olive oil in a skillet over medium heat. Add chickpeas and spices stirring until warm.
- In a medium bowl, add arugula, cucumber tomatoes, olive oil, coriander and ¼ tsp salt and set aside.
- Lightly toast tortillas in non-stick pan until warm and pliable.
- Assemble tacos by spreading Hummus or Baba Ghanoush onto the warm tortillas, add salad and warm chickpea mixture. Serve and enjoy!
