Make –Ahead Meat Free Burritos

Serves 10 / 50 mins


  • Casa Mendosa® 10” Original Tortillas
  • 3 ½ cups of ground tofu or Impossible meat
  • 2 tbsp. of Mexican spice mix or taco seasoning
  • 2 1/3 cup of refried beans
  • 2 red bell peppers
  • 2 stalks of green onions
  • 1 ¼ cup of canned or frozen corn, drained
  • ½ cup of cilantro
  • ½ cup of sliced black olives
  • ½ of pickled Jalapeno slices


Prep Time: 30 minutes

Cook Time: 20 minutes

Total Time: 20 minutes

  • Preheat over to 425°F.
  • Place a frying pan on medium to high heat with a little oil. Once warm add in ground tofu or impossible meat and Mexican spice or taco seasoning. Cook until browned and remove from heat
  • Place a tortilla on a flat surface and begin by spreading 1/3 cup of refried beans on one side of the tortilla and ¼ cup of Mexican spiced tofu or impossible meat
  • Add the remaining bell pepper, green onions, corn, cilantro, olive and jalapenos
  • Fold in each side of the tortilla, then roll, starting from the closest edge, until the wrap is fully closed
  • Place burritos in a large casserole dish and bake in the oven for 15-20 minutes or until the wraps are lightly golden.
  • Allow the wraps to cool to room temperature before freezing.
  • To reheat, remove from freezer and allow the burrito to thaw. Reheat in the oven or microwave until warm.
  • Serve with salsa, avocado or guacamole.
