Make –Ahead Meat Free Burritos

Ingredients
- Casa Mendosa® 10” Original Tortillas
- 3 ½ cups of ground tofu or Impossible meat
- 2 tbsp. of Mexican spice mix or taco seasoning
- 2 1/3 cup of refried beans
- 2 red bell peppers
- 2 stalks of green onions
- 1 ¼ cup of canned or frozen corn, drained
- ½ cup of cilantro
- ½ cup of sliced black olives
- ½ of pickled Jalapeno slices

Prep Time: 30 minutes
Cook Time: 20 minutes
Total Time: 20 minutes
- Preheat over to 425°F.
- Place a frying pan on medium to high heat with a little oil. Once warm add in ground tofu or impossible meat and Mexican spice or taco seasoning. Cook until browned and remove from heat
- Place a tortilla on a flat surface and begin by spreading 1/3 cup of refried beans on one side of the tortilla and ¼ cup of Mexican spiced tofu or impossible meat
- Add the remaining bell pepper, green onions, corn, cilantro, olive and jalapenos
- Fold in each side of the tortilla, then roll, starting from the closest edge, until the wrap is fully closed
- Place burritos in a large casserole dish and bake in the oven for 15-20 minutes or until the wraps are lightly golden.
- Allow the wraps to cool to room temperature before freezing.
- To reheat, remove from freezer and allow the burrito to thaw. Reheat in the oven or microwave until warm.
- Serve with salsa, avocado or guacamole.
