Pineapple Shrimp Tacos

Unlike pineapple on pizza, this recipe for Pineapple Shrimp Tacos is bursting with flavour and a hint of spice. The pineapple provides a sweet and tangy taste which helps cut the bit of siracha. All you need are the following ingredients

This is the perfect start if you are looking for a quick and easy Friends Friday Fiesta (say that 5 times fast!). All you need is 30 minutes and away you go. Start by coating the pineapple with one tablespoon of olive oil. Place on a baking sheet and broil for 5-8 minutes. Set aside. Rinse shrimp in the sink, pat dry with a paper towel and toss in a small bowl with siracha, one tablespoon of olive oil and cayenne pepper. Place a large non-stick skillet on the stove over medium-high heat. Add the shrimp to the hot pan and sauté for 5-8 minutes, occasionally flipping, until the shrimp are cooked through. Create a bed of shredded purple cabbage on Casa Mendosa® 50% Corn 50% Wheat Small Tortillas, add seasoned shrimp, broiled pineapple and crumbled Queso fresco. Squeeze a little lime juice on top for some added flavour, and enjoy!

Grilled quesadillas with Chorizo & Pineapple salsa

It’s almost impossible to say no to a cheesy quesadilla (Do you know anyone who does? If so we recommend a new friend). Still, if you feel a little more adventurous and want to try flavour outside your usual comfort zone, this recipe will blow your standard quesadillas out of the water. All you need are the following ingredients;

In 35 minutes, you can jazz up your at-home quesadillas by finely chopping onion, jalapeno, cilantro, lime juice, salt, and pepper and toss in a bowl. Let it sit at room temperature to marinate for about 15 minutes. Place a non-stick skillet over medium-high heat, adding chorizo. Break up the sausage meat with a wooden spoon until browned, about 3 minutes. Drain and set aside.

Preheat a Panini press to medium-high heat. Brush one side of 2 tortillas with oil and lay the dry side on a work surface. Scatter each with 1/3 cup of cheese. Sandwich with the remaining tortillas and brush the tops with oil. Place one quesadilla in the Panini press at a time and close gently (if you don’t have a Panini press feel free to use a fry pan or heat in an oven). Cook until golden brown and the cheese is melted, 4 to 6 minutes. Repeat with the remaining quesadilla. Cut the quesadillas into wedges and top with the chorizo and pineapple salsa. Serve with tomato salsa, sour cream and avocado if you choose.

Chicken & Pineapple Salsa tacos

This quick and easy recipe is perfect for Taco Tuesday especially when you feel crunched for time. Start by placing your oven on broil at 420°F. Mix the pineapple, red onion, cilantro, and lime in a medium-sized bowl. Line a baking sheet with parchment paper and broil the shredded rotisserie chicken in the oven for 10 minutes or until the chicken is crispy. While the chicken is broiling, warm the Casa Mendosa® tortillas on a frying pan. Top each taco with rotisserie chicken, pineapple salsa, avocado and pomegranate. Serve and enjoy!

Shredded chicken quesadillas with peach, jalapeno and avocado salsa

Start by boiling chicken until cooked (about 25 to 30 minutes), allow it to cool and shred the chicken in a medium-sized bowl. Add salt, cumin and chili powder to the chicken and mix well. Use a flat surface or a cutting board, diced peaches, jalapeno, red onion, cilantro, lime and avocado, and add salt to taste and stir thoroughly. Leave the salsa to sit for a few minutes while warming the Casa Mendosa® 50/50 Corn- Wheat Medium Tortillas on a gas stove, oven or microwave. Place tacos on a plate and begin assembling. Placed shredded chicken on the tortilla, add optional coleslaw and top with salsa and, if you have it, Sriracha aioli. Enjoy this delicious combo.

It’s hard not to crave something sweet and at the end of a meal; dessert is a must when it comes to entertaining. If you want to keep things simple while keeping the sweet and spicy fiesta going, these recipes are a great go-to, especially if Mexican-style desserts aren’t usually your thing.

Apple Pie Tortilla cups

This quick and easy Apple Tortillas dessert will impress your guest when it comes to presentation, and it’s guaranteed to taste even better. All you need are the following ingredients;

Begin by preheating your oven to 400˚F and set aside a 6-cup standard muffin tin. Spray with cooking oil to prevent sticking. Place 2 Casa Mendosa® tortillas on a work surface. Brush with melted butter and dust with cinnamon sugar. Stack and cut into quarters. Place two pieces of sugared tortillas into each muffin cup and bake until golden and crisp. While they bake, make the apple filling. Mix chopped apples with cinnamon sugar and place in a frying pan over medium heat. Melt butter and sauté the apple mixture for 3-5 minutes until soft. Remove the cups from the oven and allow them to cool slightly. Add in the sautéed apples. Top with whipped cream and caramel sauce. YUM!
